Beef Stroganoff
Ingredients

500g beef strips

1 whole onion diced

1 tsp garlic crushed

1/4 Cup coconut yogurt
-
Mushrooms sliced into chunks

4 tsp butter
-
1 whole large zucchini

Salt and pepper
Method

In a large pan over a medium heat, melt 2 tsp of the butter

Add the onions, garlic and the mushrooms, season with salt and pepper

Cook until the onions are translucent and the mushrooms are browned, the garlic will cook quickly, keep stirring to ensure it doesn’t burn.

Remove the onions, garlic and mushrooms from the pan.

Add the rest of the butter followed by the beef strips

Season with salt and pepper

Once the beef is cooked through, lower the heat and return the onions, garlic and mushrooms to the pan.

Add the coconut yogurt and stir until a creamy sauce forms.

Serve over spiralized zucchini
