Chocolate Zucchini Brownies

These brownies are so good, even people who are used to the sugar and gluten filled version of this dessert will love them!


  • 1 large apple or two small apples

  • 1 teaspoon cinnamon

  • 1 large zucchini

  • 1 cup of almond butter

  • 1 egg

  • 1/3 cup maple syrup

  • 3/4 cup coconut oil

  • 3/4 cup dark cocoa powder

  • 2 teaspoons vanilla extract

  • 1 teaspoon baking powder




  1. Preheat oven to 180C and line a baking dish with baking paper

  2. Peel and dice the apple, place the apple in a pot of water over a medium heat and add the cinnamon. Leave to cook for 20 mins. Drain the water once the apples are soft.

  3. In a food processor, blitz the zucchini until it is smooth. Add the all the other ingredients (including the cooked apples) and blend until combined.

  4. Pour the brownie batter into the baking dish and cook for 45 mins.

  5. Leave the brownies in the dish for 10 mins to cool, then cut and serve or freeze for later.
