Paleo Pizza

Pizza is one of my favourite comfort foods, but traditional pizza, even the gluten-free versions aren't exactly paleo friendly. This is my versions, feel free to switch up the toppings as you please!

Paleo Pizza

 

Ingredients

  • ½ cup coconut flour

  • 1 cup almond meal;

  • 1 tsp baking powder;

  • 2 tsp garlic powder;

  • 1 tsp salt

  • 1 tsp oregano

  • 1 tsp rosemary

  • 1 tsp thyme

  • 4 eggs;

  • 3 tbsp extra-virgin olive oil;

  • 1/4 cup coconut cream;

  • 1/4 cup water

  • Tomato paste

  • Vegan cheese

  • 1/2 white onion

  • 3 rashers bacon

 

Method

  1. Preheat your oven to 180 C, place a pizza stone in the oven to pre heat as well.

  2. In a large bowl, combine the coconut flour, almond meal, salt, baking powder herbs and garlic powder. You may be tempted to leave out the herbs and the garlic powder but this will leave the pizza tasting very coconuty

  3. Using a whisk to eliminate any clumping, whisk in the wet ingredients. The batter will seem quite different in texture to conventional pizza dough, but once cooked it will take the right form.

  4. On a well greased and rimmed pizza pan, pour in the batter and spread it until it’s covering the complete surface. 

  5. Level the batter with a spatula or knife. 

  6. Bake the crust alone in the oven (on the pizza stone in the pan where possible) for 15-20 minutes.

  7. Slice the bacon into small chunks and fry over a medium heat

  8. Dice the onion into small fine chunks

  9. Once the base has cooked spread a thin layer of tomato paste over it, followed by the onions, cheese and bacon

  10. Place the pizza directly on the pizza stone and cook for 10-15 minutes or until the cheese has melted and browned.
